Nature Friendly Baking; Orange, Ginger, Cranberry and Granola Flapjack. Jordans Cereals.

As well as communicating vital science to help conserve nature and our fabulous wildlife, sometimes we need to work on how we change our lifestyles. By no means are these massive changes, but if everyone made them, this would make a massive impact. 

Agriculture is the biggest threat to the environment as recorded by scientists and is also listed in the list of risks by the IUCN. In addition 70% of the UK is farmed in some way. So in order to improve the population of species in these areas and to increase the UK’s biodiversity, farmers should be part of any conversation about conservation, and ultimately should be supported making suitable changes to be wildlife friendly.

This is where the Wildlife Trusts and Jordans cereals come in.  The first granola made by Jordans was introduced in 1972, and now their selection of cereals is found in supermarkets all over the country.  They work in collaboration with the Wildlife Trusts, so it is far easier than you think to help nature whilst baking!

‘There are more than 30 farms which grow oats for Jordans, and together they farm over 15, 000ha of countryside. Every Jordans farmer works with experts from their local Wildlife Trust to support wildlife on at least 10% of land on each farm.’

The Wildlife Trusts

Flapjack and Jordans Cereal.

What you will need:

  • 200g Oats
  • 25g of Jordans Granola – I used ‘Simply Granola with a Hint of Honey.’ This adds a nice crunch among the gooeyness of the flapjack!
  • 125g Light Brown Sugar
  • 125g butter
  • 2 tablespoons of Golden Syrup – you can add more or less; it depends how gooey you like it
  • 1/2 teaspoon of Black Treacle
  • 1 tablespoon of Ginger paste (about an inch of crushed ginger root)
  • Handful of dried cranberries
  • Zest of 1 orange
  • Flaked almonds for decorating

Method.

Preheat the oven to 200 degrees/180 fan/gas 6.

Line an approximately 20×20 cm baking tray with grease proof paper.

Melt the butter, syrup and ginger paste in a pan on a gentle heat until melted.

Mix all the dry ingredients (save some of the granola to sprinkle on the top later), half of the cranberries and the Orange zest together.

Pour the butter and syrup mixture with the dry ingredients and stir until well combined.

Empty into the lined baking tray – spread until the mixture is evenly spread in the tin, and press with the back of a spoon so it is nicely compacted.

Sprinkle the remaining granola, dried cranberries and flaked almonds over the top of the flapjack (these may need to be pressed in slightly so they don’t fall off when cutting).

Bake for 15-20 minutes until nicely golden brown.

Allow to cool and cut into 12 generous squares.
